excellent coating, haven't ever cooked with teflon due to toxins in it (can't see purposely ingesting toxins just for convenience sake) that being said. I have the 2.2qt saucepan and the 10 inch fry pan and they are both very good to cook with. I do use a slight oil when i cook 1tbsp and all slides off. I even accidentally burnt one to a black lowest crisp and it looks as good as new. This is a remarkable alternative to teflon if you use it or stainless if your tired of scrubbing those pans. I cook daily in them; varied food for 2 months and no problems.
